Mulled Wine

Now that the colder weather has set in, hot drinks are a must. This recipe is for a traditional hot mulled wine drink that is a must after a walk on a cold day, and any other time, come to that!

 
Ingredients:
  • 1 bottle of red wine, preferably a Burgundy type, not too heavy.
  • 1 lemon
  • 1 orange (optional)
  • 1 cup (250ml) of granulated sugar
  • 4 dried cloves, make sure that they have not been kept too long
  • 2 cups (500ml) water
  • 4 sticks of cinnamon about 2" (5cm) long

 

Method:

Use a saucepan with a capacity of about 2 litres or more. Bring the water to a gentle boil and add the sugar, stir until dissolved. Add the cloves and cinnamon, bring back to the point of boiling and leave to simmer very gently for 5 minutes.  Meanwhile cut the lemon (and orange if used) first into half and then into very thin slices across discarding any seeds. Add the fruit and allow to stand unheated for about 10 minutes. If you are going for that walk, leave it while you are out.

About 10 minutes before serving, add the wine and heat again very slowly being careful not to let the mixture boil. Stir gently occasionally. Serve in wine glasses when hot being careful not to spill. Make sure that your guests are aware how hot it is!
